Holiday Nog

Holiday Vegan NoggThis non-dairy eggnog is delicious and should be enjoyed warm, with friends and family.

1 cup Cashew milk
2 cups Coconut milk
2 tbsp Brown sugar
8 vegan Marshmallows
2 tsp Vanilla flavor
1/4 tsp Cinnamon
3 pinches of Nutmeg (use sparingly, nutmeg is very strong)


Combine cashew and coconut milk in a pot and simmer on a medium heat. Add nutmeg, cinnamon, vanilla flavor, marshmallows, and sugar. Mix and cover to simmer for 30 minutes, checking and mixing occasionally. If marshmallows are not melted after 30 minutes continue to cook for an additional 15 – 20 minutes until they are completely dissolved.

Once marshmallows are dissolved, it’s time to make the nog frothy. You can do this one of two ways:

1. Place some of the mixture in a jar with a lid. The mixture should fill the jar no more than 3/4 of the way to leave room for the foam. Shake it for approximately 30 seconds, remove lid and place in the microwave for 60 secs which will stabilize the froth.

2. Use a hand blender to whip and make the mixture until foam and froth forms.

Pour the mixture into a cup using a spoon to hold back the foam. Then scoop the foam on top. Add a cinnamon stick to garnish and serve warm.

For every one over 21:
Brandy or Rum can be added to this delicious drink but, please drink responsibly.
