I made this soup two weeks ago during a cold stormy and windy night. On nights when I get home late in the evening, and have approximately 3 hours to cook, earn quality family time, and hope that I have a few moments left for myself to meditate on how I will do it all over again the next day – I need to cook something quick, healthy and tasty.
In this recipe, I’ve married an organic pre-packaged soup with fresh produce to create an enjoyable and healthy meal that won’t leave you feeling exhausted, bewildered and overwhelmed.
– 3 organic Roma tomatoes: CHOPPED
– 1/4 onion: CHOPPED
– Imagine Garden Tomato Soup
– 1 Bouillon Cube
– dash of Garlic powder
– dash of Onion powder
– 4 fresh Basil leaves CHOPPED (or 1/4 tsp of dried Basil)
– 1/4 tsp of Thyme
– 1/4 tsp of Oregano
– Fresh Parmesan cheese (optional garnish)
– dash of salt (optional, to taste)
Heat pot on a medium heat with oil. Add onion and bouillon cube. Sauté until onion turns translucent (no more than 3) then add fresh tomato. Sauté until tomato softens (no more than 5 – 7 minutes, longer if you prefer) then add Imagine Garden Tomato Soup. Add herbs and spices, mix, and simmer until it bubbles. Remove from heat and serve.
This soup goes perfect with crackers (I love rosemary flavored crackers)…and it also goes well with buttered Naan bread.
